There are two main categories of pasta used in Italian food, dried pasta and fresh pasta. Right now there are over 350 different shapes and varieties of dried pasta being used in Italian food. Some varieties are common and others are specific to a certain regional area. The shapes used in Italian food can range from the classic tubes and strands to butterflies or bowties and even unique shapes such as tennis rackets. Italian food is taken very seriously in Italy and by law all dried pasta is required to be made with pure durum semolina flour and water. This standard is adhered to by most pasta makers all over the world and only this type of dried pasta is used in good quality Italian food.

The reason that Italian food in Italy tastes different than the Americanized Italian food is because pasta makers in Italy take more care in making quality pasta. Dried pasta is meant to hold onto the sauce with which it is being served. After all, Italian food wouldn’t be Italian without the sauce. The pasta is made with ridges or into complex shapes in order to grab onto the sauce. These ridges are formed during a process known as extrusion. This is the step in pasta making where the pasta is forced out of a copper mold and then cut into the desired length before being dried. The copper molds are the key. They are expensive and likely to wear, but they make the best pasta. Unfortunately, most of the pasta used in American Italian food is made with steel molds that make the pasta too slick to hold onto the sauce. Pasta should be dried for a specific amount of time in a specific temperature depending on the variety. Pasta made in Italy is allowed to dry for long periods of time, up to fifty hours, and at relatively low temperatures. Companies outside of Italy typically dry their pasta at high temperatures in order to get it dried quicker. This method comes at a price and diminishes the quality of the pasta and the resulting Italian food.

The other form of pasta used in Italian food is fresh pasta. All pasta actually starts out as fresh pasta but certain pasta recipes require that the pasta be eaten fresh and soft, not dried. Fresh pasta is often made with slightly different ingredients than dried pasta. In the northern parts of Italy fresh pasta is most often made with all-purpose flour and eggs. However, the southern parts of Italy make their fresh pasta with semolina and water. It should be noted that different recipes can call for different variations. These different recipes give a distinct flavor to the Italian food of different regions. Some types of pasta are meant just to be eaten fresh, while others are meant to be dried. There are also some types of pasta that can be fresh or dried; it depends on what Italian food dish is being prepared.

Eggplants, tomato puree, mozzarella, basil, minced meat and Parmesan: these are the main Italian ingredients that I use to prepare this delicious Italian pasta-based first course. Its preparation is easy: first you should prepare the ingredients separately in this way, you should cut the mozzarella, cook the tomato puree with minced meat and basil, cook the pasta type penne and fry the eggplants then you should simply mix all the ingredients together. This Italian recipe seems to suggest another traditional Italian recipe typical of Sicily that is the famous “Pasta alla Norma” but these two recipes are different.
INGREDIENTS (for 4 people):
350 g of Pasta type penne
800 ml of Tomato puree
2 Eggplants
Oil to fry the eggplants
50 g of Minced meat of veal
1 / 2 of Onion
4 Tablespoons of extra virgin olive oil
3 – 4 leafs of basil
150 g of Mozzarella
Salt
Parmesan 

PREPARATION TIME: 30 minutes

COOKING TIME: 1 hour

WINE: Sambuca di Sicilia bianco Doc (White Wine)

PREPARATION
Let the salted water boil for pasta. Preheat the extra virgin olive oil in a pan, cut the onion in slices add them to the oil and let it brown on a low flame in order to not burn them.

Then remove it, add the minced meat and let it brown,

add the tomato puree and the basil, mix all together and let it cook for about 30 minutes.

In the meantime prepare the eggplants, clean them, cut them as matches and fry them in a pan with hot oil.

When eggplants are cooked, place them over a sheet of kitchen paper in order to remove the oil in excess

and prepare the mozzarella cutting it in cubes.

When water boils, place in it the pasta and cook it for the time indicating on the packaging, then drain them. Re-place in the same pan a part of pasta, pour on it some sauce, a part of eggplant and a part of mozzarella, sprinkle with some Parmesan and mix all together;

Ravioli with Salmon – Primo

This is a very easy recipe to prepare. You don’t need many ingredients, just the dough for ravioli and the filling that is made of potatoes and smoked salmon, a very good combination of taste. The preparation of the dressing is also very simple and fast, you just need to melt some butter and add some black pepper. The only thing that is a bit long to do is the preparation of the dough for ravioli but it is also very easy and funny. You can safe some time using the machine for roll the dough instead of using the rolling pin. In both case you will obtain very delicious Italian ravioli with smoked salmon and potatoes.

INGREDIENTS (for 4 people):
300g of Flour
3 Eggs
Salt
2 Potatoes
200g of Smoked Salmon
40 g of butter
Black pepper

PREPARATION TIME: 1 hour

COOKING TIME: 10 minutes

WINE: Cortona Sauvignon Doc (White Wine)

PREPARATION
Mix flour with eggs and a bit of salt until you will obtain a homogeneous dough.

Then lei it stand for 30 minutes, in the meantime prepare the filling. Boil two potatoes and when they are cooked smash it. Cut the smoked salmon in little pieces and mix it with the smashed potatoes.

It’s time now to stand the dough so, roll out the dough, you can do this with the help of a rolling pin or more easily with the help of a pasta machine. Here I use the pasta machine. Start roll out the dough from the biggest thickness of the machine then little by little reduce it until you obtain a pastry of about 2 – 3 mm of thickness. Cut the pastry in long rectangular pieces like shown in the picture. Put in the middle of the pastry the filling and cover it with the rest of the pastry.

Now cut with the help of a star-shape ravioli, put them on a tray with a bit of flour (in order to not them attach each others).

Let the salted water boil for ravioli and cooked them in it for about 10 minutes. Prepare the dressing for ravioli with melted butter and black pepper.

When ravioli are cooked put on them the melted butter and serve hot.

Taking pictures when you go on vacation is extremely important. It will allow you to re-visit all those fond memories and also make for great conversation pieces when you return home. Make sure your subject matter is within the frame of your shot. You must always check the corners and edges in the shot before you click. This will reduce the chances of amateur mistakes like missing top halves of heads. Also look for patterns and symmetry especially when shooting buildings on your Italy vacation. For example if you are taking a picture of a street scene, try to have all the buildings in your shot on an angle. Simple patterns and simple subjects also make for beautiful shots especially when you use natural light.

The best times to shoot for the best shots are early in the morning or late in the day. This is because film or digital sensors in digital cameras are much more sensitive to light than your eyes so what may seem to be a normal bright day could show up in your prints as too bright and washed over. You will do best to also always make sure the light is behind you unless you are shooting people. If you take pictures of people who are looking into the sun you end up with squinted eyes in your pictures. You can also avoid this by taking pictures early morning or late in the day when the sun is not as powerful.

Another technique to use for your photographs during your Italian vacation is to change your point of view from the subject. For example shots looking up usually turn out beautiful so try taking some pictures on your knees. Other variations include taking close ups rather than always trying to get too much into the frame of the picture. Also, to make for some great photography during your Italy vacation, try one of the most powerful techniques that professional photographers use. Avoid placing all your subjects in the middle of your frame. Have the subject on an edge or in a corner and click. It is important to remember that even amateurs can take great looking pictures and an Italian vacation presents tremendous opportunities to practice taking pictures.

This is a seasonal recipe made of rice and asparagus. This is a light and delicate first course. There are many variation of this dish like the risotto with asparagus and shrimps or the risotto with asparagus and strawberry that is typical of Verona.

Risotto con Asparagi

INGREDIENTS (for 4 people)
320 g of Rice
2 Vegetable stocks-cube
1/2 of Onion
10 g of Butter
500 g of Asparagus
1 Glass of White wine
3-4 Tablesppons of Extra virgin olive oil
Parmesan

PREPARATION TIME: 10 minutes

COOKING TIME: 30 minutes

WINE: Pomino bianco Doc (White Wine)
PREPARATION
Prepare broth with water and 2 stocks-cube vegetable in a pot.
Risotto con Asparagi
Clean the asparagus and cut the woody ends of the stalks if necessary then cut them in pieces.

Take the skin of 1/2 onion off and chop it. Heat the extra virgin olive oil with the butter in a pan, then put in it the onion and let it brown.

Add the pieces of asparagus and cook for about 10 minutes.

Add the rice and make it roast.Then add the wine and let it evaporated.

Start to add 1 ladle of hot broth stirring until it is absorbed, continue in this way, adding ladles of hot broth, for about 15-18 minutes.

1 Zucchini
10 Flowers of Zucchini
1 slice of Speck
160 gr of pasta (type mezze maniche)
125 ml of Cream
1/4 of Onion
3 Tablespoons of Extra-virgin-oil
Salt
Pepper

PREPARATION TIME: 15 minutes

COOKING TIME: 15 minutes

DIFFICULTY: easy

WINE: Colli Bolognesi Barbera ( Red Wine)

PREPARATION
Let salted water boil for pasta.
Clean the Flowers of Zucchini and cut them into pieces.

Cut speck into small cubes. Heat 3 tablespoons of extra virgin olive oil in a pan, add onion and the cubes of speck and let them browned.

For the budget conscious traveler an Italian vacation may seem far out of reach. But many people are surprised to find that visiting this destination may be well within the cards. One of the most expensive aspects of a vacation is usually the airfare and hotel. So what are the options available for those who want to enjoy Italy and save at the same time?

Well for starters you may want to go on your vacation to Italy during the off season. This will mean that you will find cheaper airfares. There are great prices to be found for airfare especially if you plan to fly directly from a major international airport such as New York or London. All airfare rates drop dramatically after the summer. Hotel rates per night will also be more affordable. After the summer many hotels are recovering from the large numbers of people that came through their doors.
